Easy Diabetic Banana Bread Recipe


Servings: 12 = 1/12 of the recipe


Ingredients:
  • 1cup sugar substitute (like ESTEE Fructose)
  • 1/2 cup margarine (low fat is best)
  • 2 Tbsp skim milk2 egg whites (slightly beaten)
  • 3 medium ripe bananas (mashed)
  • 1 1/2 cups all purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt (ESTEE Salt-In)
  • 1/2 teaspoon baking soda

Method:
  1. Cream the margarine and sugar substitute
  2. Add the egg whites, milk, and bananas (mashed) to the margarine mix. Mix well.
  3.  Fold into the banana mixes the baking soda, powder and salt. Mix well.
  4. Pour mixture into a bread loaf pan that has been greased by cooking spray.
  5. Preheat oven to 350 degrees and bake for 60 minutes but check bread around 45 minutes. Every oven seems to bake differently!

Diabetic Chicken Pasta


Ingredients :
  • 1 Tablespoon extra-virgin olive oil
  • 12 oz. boneless, skinless chicken breast halves, cut into 3/4" cubes
  • 3 cloves garlic, thinly sliced
  • 1/4 cup chicken broth
  • 1 tablespoon fresh oregano
  • 1 7oz. jar roasted red peppers, drained and cut into strips
  • 1/4 cup pitted kalamata olives
  • 2 cups hot cooked Dreamfield's penne pasta
  • 1/4 cup crumbled feta cheese
Procedure:
Coat an unheated large skillet with the olive oil. Preheat over medium heat. Add chicken and garlic to skillet and cook until chicken is brown all over. The 1/4 cup chicken broth. Bring to a boil and then reduce heat. Cover and simmer for 10 minutes. Mix , red peppers, olives and fresh oregano. Heat through.Spoon the chicken over the pasta and sprinkle with feta cheese.

This recipe is a great way to enjoy yourself on a hot summer's day, but will keep your blood sugars in normal range. Ingredients:
  • 1 orange, sliced
  • 1 lemon,sliced
  • 1 peach, pitted and sliced
  • 1/4 cup orange liquor
  • Artificial sweetener of your choice
  • 1/2 liter diet 7-Up
Procedure: Combine all ingredients except for the 7-Up in a pitcher and mix them. Refrigerate for at least 4 hours.Add the 7-Up and serve it.

Ingredients:

  • 1 package pre-sweetened, sugar-free Strawberry

  • 32 ounces diet ginger ale

  • 32 ounces pineapple juice
Directions:

  • Mix strawberry with 1/2 gallon water.

  • Add pineapple juice and ginger ale.

  • Refrigerate for 24 hours for best taste.

  • Freeze a portion as ice cubes or an ice ring if desired. Garnish with lemon or limes if desired.

  • 1/2 can frozen apple juice (concentrate with no sugar)
  • 1/2 c. cooking oil
  • 2 eggs
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 c. water
  • 1/3 c. powdered dry skim milk
  • 3 c. white flour
  • 1/2 c. whole wheat flour
  • 3 tbsp. wheat germ
  • 1/4 c. soy flour
  • 1/4 c. sunflower seeds
  • 1/2 c. raisins
  • 1/2 c. dates, cut
  • 1 c. quick cooking oats
  • 1/2 c. walnuts (optional)
Thaw apple juice in bowl. Add oil and beat well. Add eggs and beat well. Add 1 cup flour, baking powder, soda and cinnamon. Beat until smooth. Add water and powdered milk. Beat. Add remaining ingredients and mix well. Either drop by spoon on greased and floured pan or spread in a pan to make bars and bake at 350 degrees about 20 minutes.

2 package Crescent rolls
1 cup Mayonnaise
2 package dried salad
1 cup Broccoli, finely chopped
1 cup Cauliflower, finely chopped
1 cup Carrots, grated
1 cup Cheddar cheese, grated
1 cup Tomatoes, chopped
Procedure:
Tap crescent rolls into pizza pan. Bake 7-10 minutes until goldenbrown. Mix softened cream cheese with mayonnaise and dried salad dressing. Spread cream cheese mixture on cooked dough and top with vegetables and cheese. Press down lightly, and chill for at least 1 hour. Cut into pieces. Serve it.
