Ingredients :
- 1 Tablespoon extra-virgin olive oil
- 12 oz. boneless, skinless chicken breast halves, cut into 3/4" cubes
- 3 cloves garlic, thinly sliced
- 1/4 cup chicken broth
- 1 tablespoon fresh oregano
- 1 7oz. jar roasted red peppers, drained and cut into strips
- 1/4 cup pitted kalamata olives
- 2 cups hot cooked Dreamfield's penne pasta
- 1/4 cup crumbled feta cheese
Coat an unheated large skillet with the olive oil. Preheat over medium heat. Add chicken and garlic to skillet and cook until chicken is brown all over. The 1/4 cup chicken broth. Bring to a boil and then reduce heat. Cover and simmer for 10 minutes. Mix , red peppers, olives and fresh oregano. Heat through.Spoon the chicken over the pasta and sprinkle with feta cheese.
