Diabetic Mexican Chicken Salad Recipe

Ingredients of Diabetic Mexican Chicken Salad
  1. 4 medium tomatoes
  2. 1 1/2 cups cubed cooked chicken
  3. 1/2 cup sliced celery
  4. 1/2 cup whole kernel corn with red and green peppers
  5. 1/4 cup chopped onion
  6. 1/4 pound slice Alpine Lace Deli Reduced Fat Cheddar Cheese, cubed 1/4 inch
  7. 1 (15-ounce) can black beans, rinsed, drained
  8. 1/3 cup LAND O LAKES Light Sour Cream
  9. 1/3 cup thick and chunky salsa
  10. Celery leaves, if desired.

How to make Diabetic Mexican Chicken Salad


  • Cut tops from tomatoes. Scoop out seeds and pulp; discard. Place tomatoes, cut-side down, on paper towels to drain.
  • Meanwhile, combine all ingredients except sour cream, salsa and celery leaves in large bowl. Gently stir in sour cream and salsa.Spoon salad into tomatoes. Garnish with celery leaves, if desired.

Diabetics Recipe of Potato Salad


Ingredients

  • 2 potatoes, peeled and diced

  • 3 hard-cooked eggs, peeled and diced

  • 1/2 cucumber, peeled and diced

  • 1 tomato, diced

  • 1 celery stalk, diced

  • 1/4 onion, diced

  • 1/4 cup chopped green onion

  • 1/4 cup low-fat mayonnaise

  • 1 tablespoon prepared yellow mustard

  • salt and ground black pepper to taste
Directions
  • Bring a large pot of lightly salted water to a boil. Add potatoes and cook until soft, 5 to 7 minutes; drain and rinse with cold water.
  • Combine the potatoes, eggs, cucumber, tomato, celery, onion, green onion, mayonnaise, and mustard in a large bowl; stir until evenly combined. Season with salt and pepper

Ingredients

  • 2 cups thin slivers jicama
  • 2 cups cubed honeydew melon
  • 3 tablespoons fresh lime juice
  • 3 tablespoons chopped fresh mint leaves

  • 2 teaspoons honey

Directions
