Sugar-Free Diabetic Cake Recipe


Ingredients:
2 cup raisins
2 cup water2 eggs, lightly beaten
1 tsp vanilla extract
1/2 cup skim milk
2 cup unsweetened applesauce
3 tsp small Sweet
1 tsp nutmeg
1 tsp salt
1 tsp baking powder
2 cup all-purpose flour
1 cup chopped nuts
sugar free chocolate
Procedure:
You may use egg substitute or egg whites.You may be omitted nuts. You have substituted the nuts with 1/2 cup mashedbananas for an entirely different flavor, if you do this, mix banana withthe wet ingredients.Preheat oven to 350 degrees. Cook raisins in the water until all water isabsorbed, approximately 30 minutes. Mix all wet ingredients in one bowland all dry ingredients in a separate bowl. Add nuts to the flour mixturethen add the flour mixture to the liquid mixture. Fold in the raisins. Bake in baking pan for 35 to 45 minutes. It is really more like nut bread.
